Chemometric Fingerprinting of Vietnamese Instant Noodle Brands via ICP-MS and Principal Component Analysis

Bui and colleagues measured metals by ICP-MS in 80 instant noodle samples from four Vietnamese brands. This note reports the noodle cake as analyzed. It is not prepared soup. Brand names are omitted. The printed span of the brand means is the finding.

Key numbers

Table 2 is titled in mg/kg, but the mercury row is explicitly µg/kg. Samples were dried at 60 C to constant mass, so the basis is dry. Chromium is 52Cr, not hexavalent. Mercury is not labeled methylmercury.

MetalSpan of the four brand meansUnit as used
Mercury0.015 to 0.025µg/kg, while the table title says mg/kg
Cadmium0.020 to 0.023mg/kg
Lead0.172 to 0.193mg/kg
Chromium0.208 to 1.355mg/kg, total chromium
Nickel0.162 to 0.573mg/kg

n is 80, with 20 samples per brand. Recoveries were 92% to 106%. Limits of detection were 0.005 to 0.02 mg/kg. Whether the seasoning sachet was included is not stated.

Methods (brief)

Noodle samples were dried to constant mass at 60 C and measured by ICP-MS. The mercury unit exception is printed on the mercury row and is not converted here.

Evidence fitness

The spans support a dry instant-noodle occurrence note. They do not support prepared ramen soup, hexavalent chromium, or a brand ranking.

Limitations

The table title and the mercury row do not use the same unit. Sachet inclusion is not stated. Arsenic, aluminum, and tin are not in this cited set.
