Prevalence of Cadmium and Lead Residues in Fried Meat (Suya) Sold in Kaduna Metropolis, Kaduna State, Nigeria

Overview

Saulawa and Jikamshi measured cadmium and lead by AAS in street-vended fried spiced meat (suya) made from five animal species in Kaduna. Both metals were found in all samples, with no significant difference among species or areas.

Key numbers

  • All samples (n = 46): cadmium mean 0.049, range 0.00 to 0.13 ppm; lead mean 0.44, range 0.29 to 0.78 ppm (Table 2).
  • Chicken suya: cadmium 0.077, lead 0.50 ppm; cattle suya: cadmium 0.033, lead 0.46 ppm (Table 3).

Methods (brief)

Samples were oven-dried at 45 °C, ashed at 500 °C, dissolved in nitric and hydrochloric acids and read by flame AAS. No detection limits, reference materials or recoveries are reported.

Evidence Fitness

Sample counts are inconsistent (50, 46 and 92), the results basis is not stated, and there is no analytical quality control. Fried chicken and fried beef are cooked-meat proxies for chicken pot pie filling and chili con carne; neither dish was measured.
