Heavy Metal Index

Health risk assessment of carcinogenic and non-carcinogenic heavy metal exposure from commercial instant noodles in Bangladesh

This ChemRxiv preprint is not peer reviewed. Paul and colleagues measured metals by flame atomic absorption spectrometry in the noodle cake only. The seasoning sachet was excluded. The cake was oven dried at 100 C before ashing, so the basis is dry. The table prints mg kg-1. This note writes mg/kg for the same numerals and does not convert them.

Key numbers

Table 3, eight brands, 102 packets:

MetalMean ± dispersion (mg/kg)Printed range (mg/kg)
Lead0.033 ± 0.0260.013 to 0.092
Cadmium0.030 ± 0.0510.005 to 0.155
Chromium0.151 ± 0.1050.029 to 0.280
Nickel0.168 ± 0.0600.085 to 0.275

Chromium is not labeled hexavalent. Arsenic, mercury, aluminum, and tin are not in this cited table.

Methods (brief)

Noodle cake was dried, dry-ashed, and measured by flame AAS. The sachet was excluded.

Evidence fitness

These figures support a dry noodle-cake occurrence note labeled as a preprint. They do not support prepared soup or a peer-reviewed claim.

Limitations

Not peer reviewed. The printed unit is mg kg-1. Chromium is total chromium as analyzed, not hexavalent chromium.
