Mycobiota, Mycotoxins, and Heavy Metals from Instant Noodles in Saudi Arabia

Nasser measured cadmium, lead, and aluminium in 42 instant noodle samples from Riyadh markets, together with fungi and mycotoxins. The product is uncooked noodles as sold. The methods describe wet digestion of a 2 g sample and do not describe a drying step. The basis is not stated.

Key numbers

The results prose for instant noodles prints lead between 0.121 ppm and 1.143 ppm, and aluminium between 1.284 ppm and 11.250 ppm. The cadmium sentence prints “0.043ppm. to o.o76 ppm”. That second token is a typesetting error and is quoted as printed. Table (3) headers are Cadmium (ppm), Lead (ppm), and Aluminum (ppm). Commercial names in the prose are not repeated here.

Methods (brief)

A 2 g portion was wet digested. No drying step is described, so these figures are not labeled dry weight. No recovery percentage is printed in the metal section used here.

Evidence fitness

The printed ranges support an as-sold instant-noodle note for lead and aluminium, with the cadmium token left unresolved. They do not support prepared soup.

Limitations

The cadmium upper token is not a clean numeral. Wet versus dry weight is not stated. Arsenic, mercury, nickel, chromium, and tin are not in this metal table.
