Determination of the Content of Heavy Metals and Nitrites in Meat Products (Pâtés and Meat Spreads) from the Market of the Republic of Srpska

Overview

This conference proceedings paper measured seven elements and nitrite in six sterilized canned pork products (three liver pâtés, three meat spreads) bought in December 2024 in the Republic of Srpska. All arsenic, cadmium, lead and tin results were below the national limits. Tin from the cans ranged from 22 to 79 mg/kg.

Key numbers

  • Lead: 0.0271-0.0620 mg/kg in liver pâté and 0.0213-0.0841 mg/kg in meat spread (Table 1).
  • Cadmium: 0.0291-0.0371 mg/kg (pâté) and 0.0252-0.0322 mg/kg (spread) (Table 1).
  • Total arsenic: 0.0066-0.0713 mg/kg (pâté) and 0.0532-0.0997 mg/kg (spread) (Table 1).
  • Tin: 22.4825-79.0422 mg/kg (pâté) and 31.2623-49.7551 mg/kg (spread) (Table 1).

Methods (brief)

Can contents were homogenized, and 0.5 g was digested with nitric acid and hydrogen peroxide in a microwave system and read by ICP-OES in triplicate. Calibration used a commercial multi-element standard with a separate quality control standard. No detection limits, matrix reference material or recoveries are reported.

Evidence Fitness

A very small sample (six products from one store) in a short proceedings paper, with no detection limits; the arsenic and cadmium values sit close to where ICP-OES usually stops quantifying, so they are uncertain. Each value is one product measured three times. These pork pâtés and spreads are a processed-meat proxy for turkey-luncheon-meat and vegetable-beef-soup, which are not linked.
