Antibiotic residues and heavy metal in pork at wet markets in Vietnam

Overview

This conference slide deck reports residues in pork chains in two Vietnamese provinces. Pork from wet markets and liver and kidney from slaughterhouses were pooled by commune into 18 samples per tissue and tested by AAS. Lead was found in 5 of 18 pork pools at levels just above the detection limit; cadmium and arsenic were not detected in pork.

Key numbers

  • Pork: lead 74.1 (70.14 to 78.7) ug/kg in 5 of 18 pools; cadmium and arsenic not detected (detection limits 10 and 50 ug/kg) (slides p. 16 and 18).
  • Kidney: cadmium 222.7 (126 to 382.7) ug/kg in 18 of 18 pools (slide p. 17).
  • Liver: lead 117.4 (71.3 to 302.7) ug/kg in 10 of 18 pools (slide p. 17).

Methods (brief)

190 pork, 88 liver and 88 kidney samples were pooled to 18 per tissue (one per commune). Metals were measured by AAS with detection limits of 70 (lead), 10 (cadmium) and 50 ug/kg (arsenic). Digestion, quality control and reference materials are not described.

Evidence Fitness

A slide deck, not peer reviewed (source_type is set to the closest category, conference material). Pooling hides sample-level variation, and the pork lead mean sits at the detection limit. The pork is fresh market pork of unspecified cut, so it is a proxy for pork-chop, which is not linked.
