This Mexican Official Standard sets sanitary and commercial specifications for cacao, chocolate, cocoa products, and related products. Section 6.8 requires producers to control contaminants, and Informative Appendix A lists maximum levels for arsenic and lead in selected cacao and chocolate matrices. The arsenic values are total arsenic because the instrument does not specify inorganic arsenic. The structured rows preserve the appendix status in notes rather than treating the table as a fully harmonized food-contaminant schedule.
