Cadmium determination in Lentinus edodes mushroom species

Overview

Maihara and colleagues measured cadmium by graphite furnace AAS in six fresh shiitake samples grown in São Paulo state and eight imported dehydrated shiitake products from Japan and China. Imported products carried several times more cadmium than the local fresh mushrooms on a dry-weight basis. The paper also prints in natura values estimated from a water content of about 90%.

Key numbers

  • Fresh shiitake, São Paulo state: cadmium 0.102 ± 0.015 to 0.207 ± 0.015 mg/kg dry weight (Table 3).
  • Imported dehydrated shiitake: 0.212 ± 0.002 to 1.25 ± 0.06 mg/kg dry weight; highest a Chinese product (Table 3).
  • In natura estimates: 0.0079 to 0.023 mg/kg (São Paulo) and 0.0212 to 0.125 mg/kg (imported) (Table 3).

Methods (brief)

Fresh samples were freeze-dried; all samples were digested with nitric acid and hydrogen peroxide and analysed in duplicate by GF AAS. LOD 0.007 mg/kg. Accuracy checked with NIST SRM 1577b, INCT MPH-2 and an IAEA mushroom material (z-scores within 2).

Evidence Fitness

Strong QA for a single analyte, but only 14 samples and two determinations each. The abstract misstates the imported in natura range (Table 3 is used). The printed DOI uses uppercase “S0101”, which resolves to the same record. Whole shiitake is a proxy for cream-of-mushroom-soup and does not support that page directly.
