Quantification of heavy metals in Chinese jasmine flower cakes and risk assessment

Overview

Huang and colleagues bought 40 jasmine flower cakes, a baked pastry with a jasmine flower filling, from 32 producers across ten Chinese provinces in May 2025 and measured eight elements by ICP-MS, then estimated non-cancer and cancer risk. Every sample value is printed. Lead and aluminum were below the Chinese limits for baked goods in all samples.

Key numbers

  • Lead: mean 0.008 mg/kg (SD 0.008), median 0.006, maximum 0.053 mg/kg (Table 4).
  • Cadmium mean 0.001 mg/kg (maximum 0.005) and arsenic mean 0.002 mg/kg (maximum 0.012); detection rates 82.5% and 67.5% (Table 4, Section 2.1.2).
  • Aluminum mean 9.32 mg/kg (range 1.57 to 38.5); nickel mean 0.296 mg/kg (Table 4).

Methods (brief)

Crushed samples (0.5 g) were microwave-digested in nitric acid and analysed by ICP-MS in helium collision mode with internal standards. Spike recoveries were 86.34 to 107.84%; detection limits are given per mL of digest (Table 2). No certified reference material is reported.

Evidence Fitness

A good per-sample dataset for one Chinese pastry, from one collection month. The PDF is the unedited accepted manuscript. Jasmine flower cake is a filled pastry, not the Western baked goods on the thin pages, so it is a proxy for blueberry-muffin, cheese-crackers, doughnut, pie-crust, sugar-cookies, wheat-cereal-biscuits and white-cake; none of those pages is linked.
