Overview
Hoseini and colleagues bought 42 hen eggs from best-selling supermarket brands in Tehran, measured lead and cadmium by ICP-MS, and ran a Monte Carlo risk assessment for adults. Both metals were far below the limits the authors cite, and hazard quotients were below 1.
Key numbers
- Lead: 2.400 to 9.000 µg/kg, mean 7.158 ± 0.248 (SE) µg/kg (Table 2, p. 2886).
- Cadmium: 1.190 to 5.000 µg/kg, mean 2.83 ± 0.151 (SE) µg/kg (Table 2, p. 2886).
Methods (brief)
Whole egg contents were homogenized, dried at 70 °C, digested with nitric acid and hydrogen peroxide, and read by ICP-MS. Addition recovery was 93 to 103 percent; no LOD or LOQ is printed.
Evidence Fitness
Small retail sample with basic QA. The abstract says 17 brands while the Methods say 21, the dry or moist basis is unclear, and collection dates are not reported. Eggs are an ingredient proxy for custard and ranch dressing, so those pages are not linked.
