Heavy Metals and Associated Risks of Wild Edible Mushrooms Consumption: Transfer Factor, Carcinogenic Risk, and Health Risk Index

Overview

Bucurica and colleagues collected six wild edible mushroom species and their soils at six Prahova County sites in 2023 and measured cadmium, chromium, copper, nickel and lead by ICP-MS in caps and stipes. Caps concentrated cadmium in every species, and the industrial city of Ploiesti showed the highest cadmium site mean. All values are dry weight.

Key numbers

  • Macrolepiota procera cap: cadmium 1.605 mg/kg d.w.; stipe 0.321 (Table 10).
  • Armillaria mellea (species mean): lead 1.972, cadmium 0.858 mg/kg d.w. (Table 10).
  • Wild Agaricus bisporus (species mean): cadmium 0.422, lead 0.796 mg/kg d.w. (Table 10).

Methods (brief)

Cleaned fruiting bodies were split into cap and stipe, dried at 40 °C, microwave-digested in nitric acid and hydrogen peroxide and read by ICP-MS. NIST SRM 1515 recoveries 96 to 115%; LODs 0.133 to 1.489 µg/kg.

Evidence Fitness

Good analytical method but weak reporting: sample counts conflict (228, 128 or 19 collections), Table 10 has no dispersion, Table 16 prints the same minimum for four metals, and the paper compares dry-weight results with fresh-weight EU limits. Wild Agaricus bisporus is the closest match to button mushrooms but this remains a proxy for cream-of-mushroom-soup and does not support that page directly.
